People with dietary fructose intolerance can eat meats including pork, but they suffer from cured meats because high fructose sugars are added during the processing such as maple syrup. Could we consider cured meats as a separate “allergen” subcatagory?

Actually, I marked the cured meats as having the “fructose” allergen, instead of making a new category. I think this should suit your needs and make it easier for me to maintain. Let me know if this won’t work for you.
