Hi! I was wondering if anyone can tell me where I canfind unbuffered vitamin c crystals? I’m desperate for breakfast foods for my son and have found a few calling for this ingredient, but can’t seem to find it, even online. Can buffered be used instead?? Thanks for your help!!

Unbuffered won’t work because it will react with things like baking soda in the recipe to creat a rising action. Must be unbuffered.
I can get it at the local health food store. Just tell them you want the bad, sour tasting stuff. :-)

I have a cookbook “The Self-Help Allergy Cookbook” by Marjorie Hurt Jones, R.N., which uses unbuffered Vitamin C crystals in some recipes to help leaven instead of lemon juice. It suggests 1/4 teas. unbuffered crystals = 1 Tablespoon lemon juice. Can you use the juice or must you avoid lemons? The author also says she uses cream of tartar in an equal amount to the baking soda in some recipes for leavening.
