I would love to have a soft, fluffy sandwich bread (especially with a whole-grain texture, if possible) that can be made gluten-free. Although I have some great recipes for other types of bread, I cannot get a light-weight sandwich-bread texture without the eggs. I can’t tolerate egg-replacer powder; I think it’s something about the cellulose or methylcarbocellulose ingredients. Any ideas?

Okay, so nobody’s posted yet, meaning I am probably not the only one who has difficulty finding a recipe! I have been experimenting, though, and am possibly on my way to a winning recipe—stay tuned…

Happywheather, I’ve just learned today that my 3 1/2 yr old youngest is allergic to egg whites, cows milk, peanuts, wheat, and soy. We’re vegetarians. He loves bread, and we usually make our own. My mom picked up a loaf of rice bread for him this afternoon, and it’s as heavy as a brick! We’re used to light, fluffy, whole grain bread. He could live on bread. Have you discovered anything yet?
I’ve been given the name of someone in our town who might have some possibilities. I will post anything I find. I would be very excited if you’ve found anything, in the meantime, with your experimentation!
