I am interested in finding a recipe for pesto that does not use any sort of tree nut, including pine nuts. My son has allergies to all nuts and I’ve tried making it without the nuts but it lacks the smooth texture that pesto should have. Any suggestions would be greatly appreciated. Thank you.

Hi, we deal with the same thing here at our house, and love pesto! The recipe I use is 1 cup of fresh spinach, 1 cup of fresh basil, some cloves of garlic (depends on how garlicky you like it) 1/3 c of grated parmesan cheese and a little salt and pepper. Put all into the food processor. Then add just enough olive oil to make it the consistency that you need for your dish. I use it on pasta or in place of butter on bread.

Thank you sooooo much. The child who is allergic actually won’t touch pesto but my husband and I love it and we don’t want to make anything that has nuts in it even if our child is not going to eat it. It has been awhile since we have had it so I am looking forward to trying this recipe, and who knows, maybe my son will come around!!!
