When I turned 40yo, I started falling apart! Hormonal changes set off a chain reaction and I didn’t realize I had chronic yeast (systemic candida) for several years. Three or 4 years ago, I found The Yeast Connection and knew THAT was my problem. I had to dr. myself, because there aren’t any drs around here who believe yeast can make you sick. (Family members weren’t supportive, either.)
The yeast are basically under control now, but they really tore up my insides during all that time I didn’t know what was wrong. I just got used to the idea that I’d always hurt/feel bad, especially after eating.
So,I have a leaky gut problem (the yeast ate microscopic holes in my intestines, causing problems with foods I ate alot of)—-yeast/mold/fermented things are the worst. I also LOVE cheese and can’t eat dairy now. I also love to bake bread, so wheat hurts now, too, but not gluten! I’ve made progress is what I can eat, but it gets frustrating sometimes, so I’ll just eat a roll like everybody else, and then I’m sorry I did.
One advantage that’s come form all this is that I’ve discovered gardening. I can’t use dried herbs/spices because of the mold content. I didn’t know I’d enjoy growing my own herbs.
I’m glad to have found this site! I’ve enjoyed learning from you all and have also enjoyed sharing recipes I’ve learned over the past 4 years.
I’m also glad this bio section has opened. I’ve wondered what some of you are allergic too!!! ;-)

The Quick Skillet Bread is my recipe. I don't think it would work in an iron skillet, unless it was like my mother-in-law's skillet. Her's is dark and VERY slick from 40 years of use. :-) Even then, I...
Gluten is what makes the flour able to hold together as it expands. Eggs help a lot. I assume the replacements would, too. The best book I've seen for baked goods is _Allergy Cooking with Ease_ by ...
