Sweet-n-spicy grain free muffins

quinoa flour
1/4 c.
tapioca flour
2 tsp.
baking soda
1/2 tsp.
unbuffered vitamin c crystals
2 tsp.
cinnamon
1 1/2 c.
apples
, peeled and chopped
1 c.
applesauce
, unsweetened
1/4c.
apple juice concentrate
, thawed
1/4c.
oil

Instructions:
Mix the dry ingredients. Stir in the chopped apples.
In a separate bowl, mix wet ingredients (applesuce, apple juice, & oil).
Add wet ingredients to the dry, stirring until just mixed.
Put batter into oiled/floured muffin tin, filling the muffin cups about 3/4 full.
Bake at 375 degrees for 20 to 25 minutes.
