Ham and cheese cups

Recipe Servings: 36 cups Description: A good appetizer or party dish Allergens: Animal, Cheese, Corn, Cow milk, Dairy, Egg, Fermented, Fructose, Fruit/vegetable, Gelatin, Gluten, Grain, Legume, Miscellaneous, Nut, Pepper, Pork, Soy, Spices, Sugar, Sulfites, Wheat Ingredient List:

Instructions: 1. Grease and flour muffin pans to make 36 muffins.
2. Make pastry.
3. Chill flour 1/2 hour in refrigerator.
4. With fork, stir salt into flour.
5. With pastry blender or 2 knives used scissor fashion cut shortening in until it resembles coarse crumlix.
6. Sprinkle 5-6 tbsp water on at a time mixing lightly with fork until pastry holds together.
7. With hands, shape into 2 balls.
8. Wrap in waxed paper to refrigerate 1/2 hour before rolling.
9. Lightly flour surface.
10. Roll flat 1/8, cut into 3 inch circles.
11. 35 minutes before serving, preheat oven to 400 degrees.
12. Beat eggs, half-and-half, salt and pepper until well blended.
13. Sprinkle ham and cheese into cup.
14. Spoon 1 tbsp of egg mixture into each cup.
15. Bake 20-25 minutes.
