1/2 cup Allergy_none mayonnaise
1/3 cup Allergy_none parmesan cheese , grated
2 tsp Allergy_none dijon mustard
pinch Allergy_none cayenne pepper , optional
1/2 tsp Allergy_none salt
2 large Allergy_none egg whites

Instructions: Wash the broccoli and cut it into bite-sized pieces. Discard the tough stems.

Preheat the oven to 350 degrees. Lightly grease a shallow one-quart baking dish. Arrange the broccoli pieces in the dish.

In a large mixing bowl, combine the mayonnaise, one-half the Parmesan, mustard, pepper and salt. Mix well. In a separate bowl, beat the egg whites with an electric mixer until they are stiff but not dry. Gently stir the egg whites into the mayonnaise mixture. Spoon the mixture over the broccoli. Sprinkle with the remaining Parmesan. Bake for about 15 minutes. Serve hot.
