Broccoli puff

Recipe Servings: 4 Description: A tasty way to have a daily portion of vegetables Allergens: Animal, Brewers yeast, Broccoli, Capsaicin/peppers, Cheese, Cow milk, Dairy, Egg, Egg white, Egg yolk, Fermented, Fructose, Fruit/vegetable, Mustard, Nightshade, Sugar, Vinegar, Yeast Ingredient List:

Instructions: Wash the broccoli and cut it into bite-sized pieces. Discard the tough stems.
Preheat the oven to 350 degrees. Lightly grease a shallow one-quart baking dish. Arrange the broccoli pieces in the dish.
In a large mixing bowl, combine the mayonnaise, one-half the Parmesan, mustard, pepper and salt. Mix well. In a separate bowl, beat the egg whites with an electric mixer until they are stiff but not dry. Gently stir the egg whites into the mayonnaise mixture. Spoon the mixture over the broccoli. Sprinkle with the remaining Parmesan. Bake for about 15 minutes. Serve hot.
