Recipe Servings: 4-6 Description: For those allergic to the nightshade family. Allergens: Bean, Coriander, Cumin, Fermented, Fructose, Fruit/vegetable, Garlic, Legume, Nut, Olive, Spices, Sugar Ingredient List:

1 can Allergy_none chickpea , rinsed
2-4 cloves Allergy_none garlic , freshly crushed
2-4 TBsp Allergy_none olive oil
1 pinch Allergy_none sea salt
1/4 cup Allergy_none cilantro , chopped
1-2 tsp Allergy_none cumin

Instructions: Stick all ingredients in your favorite food processor and blend until smooth.

This is excellent for those who can't eat nuts or who hate the tahini in hummus. My husband loves this with toasted pita bread cut into chips.

With a sulfite allergy, canned foods are to be avoided. I have not yet found dried chickpeas. Any suggestions as to where to locate or a substitution?
