1-1/2 cups Allergy_none mint chocolate morsels , divided
3/4 cups Allergy_none butter , softened
1/2 cup Allergy_none confectioner's sugar , sifted
1 Allergy_none egg yolk
1-1/4 cups Allergy_none all purpose flour
1-1/2 tbsp Allergy_none vegetable shortening

Instructions: Cookie:
Preheat oven to 350 F. Melt over hot (not boiling) water, 1 cup mint-chocolate morsels; stir until smooth. Set aside. In large bowl, combine butter, confectioner's sugar and egg yolk; beat until creamy. Add melted morsels and flour; beat until well blended. Drop by heapping teaspoonfuls onto ungreased cookie sheets. Bake at 350F. for 8 - 10 minutes. Allow to stand 3 minutes before removing from cookie sheets. Cool completely.
