Quick skillet bread

Recipe Servings: 1 Prep Time: 15 minutes Description: A quick bread that can be made with any flour. Allergens: Grain Ingredient List:

QtyName
1/4 cup Allergy_none flour
1/3 cup Allergy_none water
1/8 tsp Allergy_none salt
2 tsp Allergy_none oil

Allergy_none - User not logged in. Please log in to show allergy risk for each ingredient.

Instructions: Combine all ingredients.
Heat a 6" NONSTICK skillet (must be nonstick) fairly hot. Spread 1 tsp oil into skillet, then add the thin batter. Cover and cook 2 minutes. Uncover, spread with 1 tsp oil and cook uncovered 5 minutes. Flip the bread and cook another 5 minutes uncovered and serve. You can keep cooking/flipping to get it as crispy as you want.
Any flour will work, but some may need more water to get a thin batter.
Can be used as a tortilla, sandwich 'bread', crispy bread, pizza crust, etc.

I've used kamut(sp?), oat, rice and rye. Even bean flour works, says to the cookbook.

Notice a small hole toward the middle of the bread in the picture above? It often puffs up and will cook more evenly if you break a small hole in it to allow steam to escape.

Simple and fast! My first recipe added to my "cookbook" here. I used buckwheat flour and it turned out fine.
