Recipe Servings: 8 Prep Time: 30 min.soak time, then griddle time Description: These won't turn brown because there's no milk in them, but they are hearty. Allergens: Animal, Corn, Egg, Fructose, Fruit/vegetable, Grain, Oats, Sugar Ingredient List:

2 TBsp Allergy_none oil
1/2 tsp Allergy_none salt
1 tsp Allergy_none baking powder
1/2 cup Allergy_none oat flour , to start
3/4 cup Allergy_none quick oats
1 1/4 cups Allergy_none water
1 Allergy_none egg

Instructions: Soak quick oats in water 30 minutes. (Can keep in the ref. if you're mold sensitive.) Then add egg, salt, and oil and mix well. Then add baking powder and oat flour, until you get a medium to thick batter. (You don't want it to run all over the griddle.) Using a 1/3 cup measure, place onto a greased griddle and cook. Turn when they look dry on edges. These will take a little longer than traditional pancakes.
These make hearty sandwiches.

These are a little denser than wheat flour pancakes and they have a lot more flavor. I am new to cooking gluten free and the nice thing about pancakes is you can make a little one, try it and tweak what you want. I added splenda and squeezed half an orange in the batter to satisfy my sweet tooth!

I doubled the baking powder and baked these in a muffin pan. Makes almost 12. The advantage is that they look more 'normal' when eating with others. :-)

I'm allergic to eggs, so I replace them with 1/4 cup of applesauce. Yummy!!

I made a few different versions of these because I am always hungry and looking for something that will hold me for more than an hour or two, and that I can take to work. I too made these with applesauce, but used 1/4c buckwheat flour and 1/4c oat flour and they did brown! My three other boys who have no allergies ate them up and asked for more.
