Recipe Servings: 4 Prep Time: 20 min. Description: Great alternative to traditional fried chicken Allergens: Animal, Chicken, Corn, Fructose, Fruit/vegetable, Pepper, Spices, Sugar Ingredient List:

QtyName
2 cups Allergy_none cornmeal
4 Allergy_none chicken breasts , boneless, thawed
2-4 tblsp. Allergy_none cooking oil
dash Allergy_none salt , to taste
dash Allergy_none pepper , to taste

Allergy_none - User not logged in. Please log in to show allergy risk for each ingredient.

Instructions: Place approximatly 2 cups corn meal in a bowl. Season the corn meal with salt and pepper to taste, and mix. Coat the chicken. Place in a frying pan with bottom coated in cooking oil. On med/high heat, Cook one side then turn and cover. Cook about 20 min total.

Serve with fresh cooked veggies and enjoy!

Add any seasonings that you are not allergic to!

This needs a lot more flavor. If you like crispy foods you'll LOVE the texture! I was thinking of cutting the chicken into cubes, seasoning it with McKormic Poultry Seasoning and baking it in the oven at 350 degrees for 30 minutes with white grape juice instead of oil. Baking it on the stove made a nice little mess.

we also tried a varitation of this with adding cummin and my homemade taco seasoning, really good!
