Bacon round one skillet meal

Recipe Servings: 4-6 Prep Time: 1 1/2 hours Description: This is something I came up with after my son was diagnosed with multiple food alleries. Everone loved it including my very picky daughter! It is quite easy to make. Allergens: Animal, Beef, Carrot, Celery, Fructose, Fruit/vegetable, Garlic, Onion, Pepper, Pork, Spices, Sugar, White potato Ingredient List:

1 1/2 lbs. Allergy_none lean ground beef , thawed (if frozen)
to taste Allergy_none sea salt , optional
2 TBsp. Allergy_none safflower oil
1 1/2 cup Allergy_none water
5 Allergy_none potatoes , medium, diced
To taste Allergy_none garlic powder , optional
1 Allergy_none onion , small, chopped
1 Allergy_none carrot , large, chopped
2 stalks Allergy_none celery , chopped
1/4 lb. Allergy_none bacon , Cut cross wise into small strips
to taste Allergy_none black pepper , optional

Instructions: Add oil ( I use sunflower or safflower )to pan and heat on medium-high. Brown bacon strips , ground round, and Onion until bacon is crisp and meat is done. Add water and turn heat to medium -low. Add the rest of the veggies and the seasonings. Cook covered until water is gone and veggies are tender -crisp. Stirring often being careful not to mash the veggies. After water is gone continue cooking about 20 minute without lid and stir often to prevent sticking. Now enjoy!!

This dish reminds me of something my grandmother used to make. I didn't have any bacon and it still was tasty. I think my technique is different, though, because I should have used maybe 1/2 c. water instead of 1 1/2 cups. That's what I'll try next time.
