Recipe Servings: 4 - 6 Prep Time: 20 minutes Description: delicious breakfast potatoes - my kids love this! Allergens: Animal, Egg, Fructose, Fruit/vegetable, Nightshade, Onion, Pepper, Pork, Spices, Sugar, White potato Ingredient List:

4-5 medium-sized Allergy_none potatoes , washed
4 slices Allergy_none bacon , cut into small pieces
3 Allergy_none eggs
1 Allergy_none shallots , chopped
to taste Allergy_none sea salt
to taste Allergy_none pepper

Instructions: Microwave 4-5 potatoes till almost cooked through. In a frying pan, cook bacon for about 4 minutes on medium, adding shallots while bacon is cooking. Drain excess bacon fat. Turn off heat until potatoes are microwaved. When potatoes are done, slice them in half (skins on), then slice the halves into approx 1/4 inch slices and add all to the pan. cook for about 8 minutes, turning occassionally. Add the eggs and turn several times till the eggs are mixed in and coating the potatoes. Salt and pepper to taste.

Try different variations of this with different veggies you like and tolerate.
