1 Allergy_none eggplant , cut into strips
1/2 cup Allergy_none egg whites or Allergy_none egg substitute
1/2 tsp Allergy_none salt
1/2 tsp Allergy_none pepper
3 TBsp Allergy_none olive oil

Instructions: Wash eggplant. Cut into medium size strips or circles.
Place Rice flour on a piece of wax paper and season with salt and pepper. Dip eggplant in egg whites or egg substitute and coat both sides. Then place in rice flour and coat both sides.

Place olive oil in a non stick pan and heat on medium. Fry eggplant until coating is golden brown.
