Spicy black bean burritos

Recipe Servings: 2 Prep Time: 30 minutes Description: Delicious burritos with a kick. Allergens: Bakers yeast, Bean, Brewers yeast, Capsaicin/peppers, Cheese, Cow milk, Dairy, Fermented, Fructose, Fruit/vegetable, Gluten, Grain, Legume, Miscellaneous, Nut, Olive, Onion, Spinach, Sugar, Sunflower, Sweet potato, Vinegar, Wheat, Yeast Ingredient List:

Instructions: Heat the oil in a skillet over medium-high heat. Add the onion and sweet potato. Season to taste with salt. Mix well and cover. Reduce heat to medium and cook for 7-8 minutes stirring occasionally. Add the beans, spinach, and chipotle. Cover and cook for 3 minutes while stirring. Sprinkle with the sunflower seeds and remove from heat. Heat the tortillas according to the package instructions. Divide the filling between the tortillas, sprinkle with cheese, and roll into burritos.

That's ONE chipotle and I'd stick to it. We added a few too many, and while we still ate it all, it was SPICY!
