Spicy black bean burritos

1/2 cup Allergy_none cheddar cheese , low-fat, shredded
1 tbsp Allergy_none extra virgin olive oil
1 Allergy_none red onion , small, sliced
1 Allergy_none sweet potato , small, cut into 1/4 inch cubes
to taste Allergy_none salt
1 15 oz can Allergy_none black beans , rinsed and dried
2 cups Allergy_none baby spinach
1 Allergy_none chipotle , with adobo sauce from a can, minced
2 tsp Allergy_none sunflower seeds , roasted

Instructions: Heat the oil in a skillet over medium-high heat. Add the onion and sweet potato. Season to taste with salt. Mix well and cover. Reduce heat to medium and cook for 7-8 minutes stirring occasionally. Add the beans, spinach, and chipotle. Cover and cook for 3 minutes while stirring. Sprinkle with the sunflower seeds and remove from heat. Heat the tortillas according to the package instructions. Divide the filling between the tortillas, sprinkle with cheese, and roll into burritos.

That's ONE chipotle and I'd stick to it. We added a few too many, and while we still ate it all, it was SPICY!
