6 Allergy_none corn tortilla
1/4 cup Allergy_none vegetable oil
6 Allergy_none eggs , beaten
1/4 cup Allergy_none onions , diced
3/4 cup Allergy_none tomatoes , fresh, diced
2 Allergy_none jalapeno peppers , finely chopped
1/2 cup Allergy_none mozzarella cheese , shredded
pinch Allergy_none salt , to taste

Instructions: Slice the tortillas into strips.
Fry strips in vegetable oil.
Stir in onions and cook until tender.
Add in the beaten eggs.
Before the eggs are fully cooked, add in the rest.
Add salt to taste.
