1 c. Allergy_none applesauce , unsweetened, all natural, organic
1/4 c. Allergy_none apple juice concentrate , unsweetened, all natural, organic, thawed
1 3/4 c. Allergy_none quinoa flour
1/4 c. Allergy_none tapioca flour
2 tsp. Allergy_none baking soda
2 tsp. Allergy_none cinnamon

Instructions: Mix dry ingredients together. Stir in apples. In another bowl, mix wet ingredients, add to dry ingredients. Stir until just mixed. Pour batter into muffin tins lined with muffin cups about 3/4 full. Bake at 375 degrees for 20 minutes or until done.

I just made these (with a couple of minor changes) and they turned out beautifully. Due to availability problems, I ended up using home-ground quinoa meal and also replaced the tapioca flour with arrowroot flour. The mixture ended up very dry, so I added 1 cup apple juice. Soft and sweet - yummy. Oh yes, I also added 1/2 teaspoon cream of tartar to help them rise a bit better.

My mom just made these for my little guy and they turned out well. We substituted a mixture of brown rice flour and white rice flour for the quinoa flour b/c he doesn't do well with quinoa, added the extra 1/2 tsp of cream of tartar and put in about 2 tsp of agave nectar to sweeten and give some more moisture b/c the batter was too dry. He loves them!

i just made these with a few alterations and they turned out tasting great. Visual appeal is somewhat lacking but taste & texture are wonderful. Instead of 1 3/4 cup quinoa flour; i used 1cup crushed "Cinnamon Crunch Granola' by Enjoy Life Foods" & 3/4 White Sorghum Flour. I also used 3 types of apples, and used 1 tbs of Baking Soda, instead of 2 tsps. i also added less than an 1/8 cup of rice milk, and 1/8 cup of agave nectar.

I followed this recipe exactly and used two kinds of apples, macintosh and golden delicious. They don't look that exciting as I take them from the oven, although they smell great! The flavor is fairly bland; next time I'll add some agave nectar, too.
