Potato pancakes (latkes)

Recipe Servings: 4 medium sized pancakes Description: A wonderful, traditional Jewish breakfast. Allergens: Animal, Corn, Egg, Fructose, Fruit/vegetable, Grain, Sugar, White potato Ingredient List:

Instructions: Peel and grate potatoes.
Drain moisture from potatoes.
Mix eggs, baking powder, salt, and flower in a bowl.
Mix in potatoes.
Cover the bottom of a frying pan in oil and heat.
Form potato mix into patties (about 4").
Cook on both sides until brown.
Allow pancakes to drain before serving.
Serve with sour cream or applesauce.
