Recipe Servings: 12 Prep Time: 30 minutes Description: Yummy treats even allergy sufferers can enjoy! Allergens: Animal, Beef, Chicken, Coconut, Corn, Egg, Fructose, Fruit/vegetable, Gelatin, Grain, Miscellaneous, Pork, Rice, Sugar, Sulfites Ingredient List:

5 cups Allergy_none crispy rice cereal , (like Erewhon)
4 cups Allergy_none marshmallows , miniatures
1/2 cup Allergy_none coconut oil , (or your choice)

Instructions: Melt coconut oil (or vegan butter substitute, or oil of your choice) in a large non-stick pan. Add marshmallows (Walmart brand is gluten free) and stir over medium heat until marshmallows are almost completely melted and mixture is smooth. Remove from heat and immediately stir in gluten free cereal of your choice. Coat cereal completely with marshmallow mixture. Press warm mixture into a greased 9x13 casserole dish until tightly packed and firm. Cool, then cut into squares.

For a chocolate version, try using Enviro Kids Koala Crisp cereal. Fun to vary the cereals for a new treat. :)

To make sure these treats are gluten-free, be sure to choose marshmallows that do not contain DEXTROSE.
