Potato swirls

Recipe Servings: about 20 swirls Prep Time: 1 hour including cooking Description: Delicious entree or finger food for a party. Allergens: Fructose, Fruit/vegetable, Nightshade, Sugar, White potato Ingredient List:

Instructions: 1. Peel and chop potato. Boil potato in water until tender. Drain and mash (don't add milk or butter - mash it dry). Allow to cool.
2. Add oil to cooled potato and blend with spoon until smooth. Cover baking tray with baking paper.
3. Use icing pipette bag (with star-shaped fitting) to create decorative mounds of potato on baking tray. The base of each mound measures about 1 inch across. Refrigerate 20 minutes to firm.
4. Bake 20 minutes in hot oven (230 degrees Celsius, 450 degrees Farenheit) or until browned and crispy. To ensure even browning, rotate the oven tray at the 15 minute mark. Remove from baking tray and place on absorbent paper.
