Coconut rice (my mock mac & cheese)

Recipe Servings: 3-4 Prep Time: 5 minutes Description: Brown rice, coconut milk, ground ginger, salt, and pepper. My husband and I found that it tastes *slightly* like macaroni and cheese, and for me, someone who is allergic to dairy and gluten, this was a nice discovery. I serve it with beef hot dogs. Allergens: Brown rice, Coconut, Fructose, Fruit/vegetable, Ginger, Grain, Miscellaneous, Pepper, Rice, Spices, Sugar, Sulfites Ingredient List:

1/2 cup (approx.) Allergy_none coconut milk
Pinch (optional) Allergy_none ground ginger
1 tsp. (approx.) Allergy_none black pepper , cracked
Pinch Allergy_none salt

Instructions: Prepare rice as directed on package. Drain rice, add coconut milk and any additional spices. I would use the ginger sparingly, I probably added less than a pinch. Enjoy!
