Topic: Chef Central / How often did you cook before you had allergies?

I have to limit eating out due to my multitude of allergies which some are life-threatening. I have found a few restuarants and select items at those restuarants that I can eat, but try to avoid eating out. My husband does most of the cooking, but we have a pretty regular menu as it can be difficult to find enough substitutes. I have had to give up on some recipes because I was allergic to 70% of the ingredients. My family finds it difficult to cook when I come to visit. My main allergies are soy, milk, eggs and pork with soy and pork leading to anaphylaxis. I never leave home without my arsenal of allergy medication and my epi-pen.

Topic: Looking for Recipe / allergic to cows milk and eggs

I made my pumpkin pie with two substitutions:
1 egg = 1-1/2 ts Ener-G Egg Replacer (potato flour and tapioca flour) + 2 Tb warm water
12 oz evaporated milk = 12 oz oat milk + 3 packages unflavored gelatin

The pies turned out good.

I am allergic to eggs and milk as well, along with soy. I use rice or oat milk, I prefer oat milk for baking as it is thicker. I use an egg substitute that is tapioca and potato flour. I plan to try an egg-free, milk-free pumpkin pie by using gelatin and oak milk instead of sweetened condensed milk along with the egg substitute. I will post once I get it to work.
